A classic healthy dip and/or dressing for any occasion.
Ingredients
- 2 small avocados, smashed
- 1 cup of parsley
- 1 cup mixed soft leafy herbs (such as dill, mint, tarragon, and/or cilantro)
- 2 tbsp chives, chopped
- 1 tbsp lemon juice
- 1/2 tsp lemon zest
- 1 tbsp extra-virgin olive oil (EVOO)
- 2 tsp capers
- 1 clove of garlic
- 1/4 tsp White Truffle Salt
- Freshly ground black pepper
- Pinch of cayenne pepper
Instructions:
- In a food processor, combine the avocados, parsley, mixed herbs, chives, lemon juice, lemon zest, EVOO, capers, garlic, salt, pepper, and cayenne. Pulse until well combined. Season to taste.
