Whipped Feta Dip

Whipped Feta Dip
  • Eastern Standard Provisions Turnbuckle Soft Pretzel Sticks 1 Bag
  • Eastern Standard Provisions One-Timer Soft Pretzel Bites 1 Bag
  • Kosterina Spicy Red Pepper Olive Oil 1/4 Cup
  • Feta cheese 16 Oz
  • shelled pistachios 2/3 Cup
  • packed fresh mint leaves 1/2 Cup
  • plain full-fat greek yogurt 3/4 Cup
  • lemon juice 2 Tbsp
  • Zest from lemon 1
  • Baby cucumber 1
  • Handful cherry tomatoes
  • 1.

    In a food processor, blend the shelled pistachios until a smooth nut butter forms. (This may take a few minutes.)

  • 2.

    Add the feta, mint, yogurt, lemon juice, and lemon zest and blend to combine. While the food processor is running, add the oil in a thin and steady stream through the hole of the processor's lid. Continue blending until light and silky smooth in texture.

  • 3.

    Cut Turnbuckles and One-Timers in half.

  • 4.

    Spread mixture over Turnbuckles and One-Timers, or simply dip.

  • 5.

    Top with cucumbers, cherry tomatoes, and a drizzle of oil.

  • 6.

    Enjoy!

Italian Baked Cheese Dip

Instructions: Preheat oven to 400°F. Coat small (about 2½ cup) oven-proof baking dish with cooking spray. Beat cream cheese in a large bowl with electric mixer until light and airy, about 2 minutes. Add 1/2 cup ricotta cheese and beat for a minute. Add White Cheddar Cheese Sauce and beat for another minute. Add 4 teaspoons of basil, pepper and salt. Add 1 cup of cheddar and breadcrumbs. Beat until blended. Spread mixture in prepared dish. Top with remaining ¼ cup of cheddar. Bake for 15 to 17 minutes or until heated through but not bubbling. Serve warm, topped with tomatoes, red onions and remaining basil. Heat pretzels as directed and ENJOY!
