Spring Wheelhouse Veggie Board with Green Goddess Dip
Spring Wheelhouse Veggie Board
Ingredients
  • 1 Wheelhouse soft pretzel, baked and salted
  • 12 One-Timer Soft Pretzel Bites, baked and salted
  • Sugar snap peas, raw
  • Asparagus, raw, cut the bottom 2 inches off
  • Radish, raw, some sliced, some quartered from the top down, leaving a little bit of the stem on top for some green
  • Watermelon radish, raw, sliced in thin halves
  • Colorful baby carrots, raw
  • Yellow summer squash, raw, sliced at a diagonal
  • Orange bell pepper
  • English cucumber, sliced at a diagonal
  • Broccoli
  • Cauliflower
  • Tomatoes on the vine
  • Fresh thyme

Instructions

  • Wash and chop all vegetables
  • Place baked Wheelhouse in center of board
  • Arrange vegetables on selected serving platter

Green Goddess Dip

Ingredients

  • 2 small avocados, smashed
  • 1 cup of parsley
  • 1 cup mixed soft leafy herbs (such as dill, mint, tarragon, and/or cilantro)
  • 2 tbsp chives, chopped
  • 1 tbsp lemon juice
  • 1/2 tsp lemon zest
  • 1 tbsp extra-virgin olive oil (EVOO)
  • 2 tsp capers
  • 1 clove of garlic
  • 1/4 tsp sea salt
  • Freshly ground black pepper
  • Pinch of cayenne pepper

Instructions:

  • In a food processor, combine the avocados, parsley, mixed herbs, chives, lemon juice, lemon zest, EVOO, capers, garlic, salt, pepper, and cayenne.  Pulse until well combined. Season to taste. 
  • Fill middle of Wheelhouse with Green Goddess dip
